1 lb. Dean’s Hot or Mild sausage

1 package frozen spinach, thawed and drained well

1 shallot (can use 1/2 small sweet onion plus 1 tsp minced garlic if you can’t find shallots)

2 Tbsp unsalted butter

12 oz. cream cheese (one and 1/2 blocks)

1 cup heavy cream

1 tsp salt

1 tsp cracked black pepper

1 tsp paprika

 

 

Thaw spinach and drain well. Slice shallot thinly and chop, and saute in butter. Brown sausage completely and drain. Combine spinach, shallots, and sausage in large saute pan and stir to blend over low heat. Cut cream cheese into pieces and stir in until melted. Add cream and seasonings, and stir until heated through. Serve with your favorite corn chips or pita chips.
